My venture into developing my baking skills continued with trying out the recipe for white amaretto cupcakes. The recipe is from Cupcakes from the Primrose Bakery. I got the book in the January sale for just £3.49. Quite a bargain.
The recipe for the amaretto icing uses milk, like most of the icings in the book. As I have an intolerance to diary, I used soya milk instead in both the icing and the cupcakes to see how they turned out. The icing seemed still a bit soft, so I refrigerated it for about 10 minutes before using.
The book has instructions on how to ice buns like how they do in the bakery. My didn't turn out much like theirs. Think I need more practise.
