First Days of Something

Hey

It's all over! I had my graduation ceremony last week so I have officially finished university. The day was lovely although very warm once in the gown (and they are surprisingly heavy). Here are just some of the snapshots of the celebrations.

It Seemed So Easy

Hey

I made these cupcakes the other week and the frosting was amazing. It seemed so easy to make as well and I think it tasted better than using a flavouring. So I thought I would share it.

The frosting was made from three ingredients:
  • Icing sugar
  • Butter
  • Fresh raspberries
First you cream the icing sugar and butter together to make a butter cream frosting. Then you press the fresh raspberries through a sieve so that you only get the juice going into the frosting. I found that once the juice was combined I had to add more icing sugar so that I could get it back to a consistency that was able to pipe.


As I had to add more icing sugar, it meant I had lots of the frosting left over. So I added up serving my cupcakes with some of the frosting on the side and with fresh raspberries.

As I now have a nozzle designed for filling cupcakes, I can't wait to try this frosting inside cupcakes and finishing them off with a chocolate frosting.

Ice Cream

Hey

I've been busy baking yet again! This time I was making ice cream cookies for my mum's vintage coach trip. When the cookies came out some had lose their shape a little, but putting the icing on top helped to redefine it as I put a whole layer on first before placing the colour of the ice cream on top.

The waffle look was created by pressing the back of a knife into the icing. After "scooping" the ice cream flavour onto the cookies me and mum were trying to work out whether something was missing from them. What do all good ice creams need to be topped with?

Bed of Roses

I got my degree results a couple of weeks ago, but it was only once I got back from a christening in Southampton that my mum gave me some flowers to celebrate. She got me my favourite - Roses!

Goody Two-Shoes

Hey

At the weekend it was my big sister's birthday, so while she was away at the British Grand Prix I attempted to ice my first "big" proper cake for her birthday. I used an idea I had seen in a magazine but simplified it so I was only doing one cake and not two stacked.


As you can see, my icing skills need work. It was a good thing then that I had make shoe cookies to go on and around the cake so that they could hide the lumps and bumps.

Hit Me With Your Best Shot

Hey

It's men's quarter finals day at Wimbledon, so to celebrate Murray still in the running for the title and hopefully going all the way, I made some tennis inspired cupcakes!


I made strawberry cupcakes from Primrose Bakery Cupcakes book, then made a "lawn" green peppermint frosting which I topped with fondant tennis balls.




Come on MURRAY!!!
