So to get back into the routine of cooking each week, I started with an Irish theme. I cooked Irish steaks to go into baguettes with salad for main. I then made a chocolate Guinness cake for dessert. I used the recipe from the Hummingbird Bakery book Cake Days.
The recipe calls for just less than a can of Guinness. All the mixture only just fitted into the mixing bowl I had available. As I didn't have an electric mixer or hand mixer I had to combine everything by hand. As a result the cake did have some flecks of white in it once bake where I hadn't quite combined all the flour.
As the recipe made an 9 inch cake, there was lots to have in the following days. As a result, I just had to have a slice with a Guinness shandy to watch the last of the Britain's got talent semi -finals.
Will definitely be watching the final tonight. I hope the ventriloquist gets the wild card as he is amazing and I saw him when I went to see auditions. But I did hope Attraction wins!
